When I was in Ireland I ate some form of salmon every day- hot smoked, cold smoked, roasted etc. My friends mum made us a simple lovely dinner of Salmon with Irish butter and potatoes that knocked my socks off. The next day we had colcannon for lunch with the leftover salmon... and know here it 'tis.
